The heavy-duty lid locks down during cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a simple steam release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. An accompanying booklet contains 75 recipes, ranging from basic soup stocks to stews and pot roasts--even desserts like Petite Pumpkin Custards! Nonabrasive cleansers are best for cleaning this stainless steel pressure cooker, though occasional use of a fine metal polish will help the exterior keep its shine. After years of thinking about getting a pressure cooker, I finally did it! I couldn't have asked for a better one. This one is big enough to cook most anything. It is stainless steel and very easy clean up. Cooks so much faster than conventional and tastes like you have been simmering all day! I have cooked roasts, stew, chicken, beans. They have all come out wonderful. My only regret is that I have waited so long to finally get one. I was always afraid of using a pressure cooker, but it is one of the easiest ways to cook now. This pot is awesome!!

i went with the 16 qt canner

any canner can pressure cook. i really REALLY REALLY wanted a gauge.. after using this one i returned it. i ruing the first meal in it and the seal wasnt working correctly.

trust me - get one with an actual gauge on it.

the aspirating mechanism on this 8 quart pressure cooker is a bit tricky to use, the presto 6 quart stainless steel pressure cooker is easier to use(the presto 6 quart stainless steel pressure cooker uses a different aspirating mechanism that is more simple to use and more accurate), obviously the presto 6 quart cooker has a smaller capacity than this 8 quart cooker, if you need the extra 2 quarts cooking capacity then this 8 quart cooker is the best choice, just understand that the "new and improved aspirating mechanism" on this 8 quart cooker can be tricky to work with, i cook with pressure cookers every day for years

Just completed teaching a class on how to use a pressure cooker, and I used this model to demonstrate. We steamed cauliflower, made a batch of black beans, perfect risotto, delicious chicken cacciatore, and topped off the meal with a batch of apple crisp. The recipes, more or less, came from the instruction manual (I always add more garlic where I can). The class was a big hit, and the pressure cooker was the star of the show.
First of all it is a lovely item. It's just beautiful to look at. It is sturdy, and has two handles which makes handling much easier. It nicely accommodates the 2 quart souffle dish I use to make desserts like the apple crisp. The capacity is perfect for making stews, you really need the 8 quart size to make a batch of stew or cacciatore or the like. The instructions are easy to understand and use, it's easy to clean (get some Bon Ami if you don't already have it. This baby sparkles after cleaning.), and it hasn't left my stovetop since I bought it.
