Salmon1 bunch parsley8 cloves
garlic1 cup sun-dried
tomatoes, packed in oil1/4
tsp. salt1/4 cup olive oil1
whole salmon fillet (approx. 2
to 2 1/2 pounds)Preheat the
oven to 375oF. Start the
sun-dried tomato paste by
roughly chopping the parsley.
Using the food processor,
purée the garlic until it is
quite fine then add the
strained sun-dried tomatoes
along with the chopped
parsley. Pulse everything
together; add the salt and
pulse again. With the food
processor running slowly, add
in the oil. You are looking
for a thick, paste-like
consistency. Spray a large
baking sheet with non-stick
cooking spray and line with
parchment paper. To prepare
the salmon, remove the
pinbones if necessary and
spread a generous amount of
the sun-dried tomato paste
over the filet. Slice into
serving-sized portions, gently
place onto the baking sheet
and bake for 5 to 10
minutes.Step 2: Finishing the
